Butternut Squash with Gorgonzola Butter

Butternut Squash Wedges

Thin wedges of butternut squash, cooked in a little olive oil, caramelize the sugars and leave a delicate mottled pattern on the surface. The sweetness of the squash is then balanced by melting a Gorgonzola butter over the wedges just before serving.
