With all of the greens coming from my farm share, I am always looking for ways to incorporate them into my meals. One of my favorite methods in the morning is to make a smoothie. Smoothies incorporate all of the plant, so they are much healthier than juice alone.

The problem with vegetable smoothies, though, is that they can turn an unpleasant color. It’s hard to enjoy something that looks more like something that came out of a two year old’s mouth. But I have found a cure for this unappetizing color.


Blueberries seem to win the color war with anything. This morning I mixed a few pieces of carrot, a handful of various greens, some Greek yogurt, and some frozen strawberries and blueberries. With just enough water to blend, it came out delicious, healthy…and it looked good too.
